Kickin it up - Margarita Ice Cream Recipe

Cinco de Mayo came and went and I was remiss on sharing this awesome Margarita Ice Cream recipe I tried out. I really had no big plans to celebrate because I really had no reason to but who really needs a reason to have  a margarita...not me! So instead of making myself a cocktail I churned one. This is so so good and so easy. This version is adapted from Nigella Lawson's (The Food Network) recipe.





Margarita Ice Cream
Ingredients
1/2 cup freshly squeezed lime juice
2 tablespoons tequila
3 tablespoons Triple Sec
1 cup powdered sugar
2.5 cups heavy cream

Directions
Mix the lime juice, Tequila, Triple Sec and sugar together until the sugar dissolves. Add the cream and whip with a whisk until slightly thicker. Freeze in ice cream maker until soft serve consistency. Place in container to freeze overnight. Enjoy!

Because of the addition of alcohol the ice cream will not become very hard. It is smooth, creamy, tart and has a kick! Seriously every time I open the freezer I have to take a bite. It makes it feel like summer is already here!

Oh and at the end of the day I did get that actual margarita....or two!
