Perfectly simple Pillsbury Pumpkin Ice Cream Sandwiches

Start with Pillsbury Perfectly Pumpkin boxed cookie dough.

Just add an egg and butter.

Make teaspoon scoops.

And voila...awesome pumpkin cookies! Just the right amount of pumpkin and spice flavor and for added sweetness I sprinkled cinnamon sugar on top before baking.

Wait we're not finished yet....scoop your favorite ice cream in between two cookies. We chose oreo cookie to get some chocolate in there and then simple vanilla bean.

Roll sides in festive sprinkles or sugar

And you get a perfectly simple and festive and yummy ice cream sandwich!

What's Hot: Ciao Bella Key Lime Graham Squares

Just when I thought Key Lime Graham Gelato couldn't get any better Ciao Bella goes and makes it into a cute and tasty gelato square. As you may have read in the past, this is one of my all time favorites (free samples or no free samples) and I was genuinely super excited to try these new squares that were sent our way. Although I still prefer eating the gelato straight up out of the pint these are quite good. And are perfect for on the go or perfect when I only have one hand available...thus life with children. Same tart and refreshing taste but sandwiched between two soft wafer grahams. This has been a very humid and hot New England week so these were the perfect after dinner dessert this week.

Now as you can see a little one in my household can't wait for mommy to take a photo of it for this post. I held him off briefly.

So I could take a couple bites myself to see how awesome these are.

But in the end I lost! Thankfully there are four squares in a box so I have three more for just me.

Happy National Ice Cream Sandwich Day!

Happy National Ice Cream Sandwich Day!
I looooove ice cream sandwiches. Actually I just brought home some Klondike 100 Calorie Ice Cream Sandwiches tonight. Okay so I am feeling guilty after a weekend of binging on vacation so I had to do the lo cal option but I must admit they are quite good. When I am craving chocolate but want ice cream too I think a sandwich is the perfect solution. I know everyone loves the Skinny Cow sandwiches but if I had to choose I'd go with Klondike's Slim-a-Bear sandwiches all the way. I think the ice cream is smoother and creamier but believe me I'd never turn down either. Regardless....its a good excuse today to grab a sandwich...an ice cream one that is.....and celebrate!

Oh...and if you didn't see the fab article in last month's Woman's World...we at Scoopalicious scooped about ice cream sandwiches and a fun option we truly think is unique and yummmmmy!

Scoopalicious scoops about Ice Cream Sandwiches in Woman's World

I so love reading magazines this time of year because most of them dedicate more than a few pages on frozen treats. And its even more fun to be able to be able to contribute our thoughts on what's worth a try. Check out the most recent article in the July 1 issue of Woman's World, "You deserve the best....Ice Cream Sandwiches" where Bethany and I were able to share one of our favorite treats, the Blue Bunny Birthday Party Ice Cream Sandwich. When Kristina from Bauer Publishing called to ask our opinion on ice cream sandwiches for her article it was way too easy to come up with one as I literally had just walked in the door with a fresh box of Blue Bunny Birthday Party Ice Cream Sandwiches. And Bethany is such a huge cake batter ice cream fan that she too had the same sandwich in mind so we dished about it together.

As you'll read in the article, The Blue Bunny Birthday Party Ice Cream sandwich is full of confetti sprinkles, swirls of blue frosting, and it has a wonderful cake batter flavor. When Kristina asked us to think about what makes it unique we both agreed that its just not your typical sandwich. One expects chocolate wafers with vanilla ice cream in between but this one has vanilla wafers with confetti filled cake batter ice cream sandwiched between the sweet soft cookies. It's refreshing, sweet, and fun to eat. Oh and light too which is a bonus after daily intakes of ice cream in this heat! I must admit my five year old convinced me to first get them but I quickly became hooked and now they are a staple in our freezer.

Hopefully its not too late to check out the article because it also has ideas on other good choices for ice cream sandwiches. Speaking of light...another favorite of mine, Skinny Cow Mint Ice Cream Sandwiches also got a shout out and our other favorite brand, Turkey Hill, gets a mention for their Limited Edition Strawberry Cheesecake sandwiches which I must admit I have not tried but they sound awesome.

Thanks Kristina for reaching out to us. We love to share our passion and love for ice cream with the world and your readers!

Taste testing: Mrs. Fields Ice Cream Cookie Sandwiches

When I was in middle school and I actually liked to shop, my mom used to drop friends and I at Westfarms Mall. Among the new found freedoms of being away from my parents, I found this sweet treat in Mrs. Field's Cookie Cups that I could buy with my own money. What an addiction, those frosting filled chocolate chip cookies! I loved the frosting filled cookies. In fact, I even bought Mrs. Field's Cookie Book in hopes of making the same recipe. To my dismay, the recipe wasn't in the book...but there were some other pretty good recipes in it that made it worth keeping!

Fast forward almost twenty years. I haven't had a Cookie Cup in ages. I'm dangerously wandering down the ice cream aisle at Hannaford's and a red box shouts out at me "Pick me! Pick me!" What's this? Mrs. Fields cookies and Breyer's Ice Cream? What a treat. My arm, still sore from my yoga class (oh the irony) reaches into the freezer...

Later that night, Husband ask for dessert. I send him down to the chest freezer for the sandwiches, silently hoping he won't look too far and find his birthday present. If he did, he says nothing. He emerges from the basement, cookie in hand, and complains to me that he should have known how small they would be, the box being so light.

Later on, I bring up my own cookie sandwich. He's right. It is small. But it's actually refreshing -- in a world of supersizing, it's nice to see that Breyer's and Mrs. Fields know that this works well as a "good things come in small packages" kind of treat. If it were bigger, I'm sure I would have finished it. But truth be told, I was really truly satisfied with the three-ounce sandwich one serving had to offer.

The only thing that struck me as strange was the number of servings per container: five. Yeah, that's right. Five. I have never gotten anything in an odd number. I have gotten four, or six, or eight, but never five. Five doesn't fit neatly in a box. Why five? It does make me think of growing up in a family of five -- six ice cream treats? Who got the last one? Four cupcakes? How do you divide that? But then again, five causes those same problems for the family of four or the family of six.

Overall, I was happy with my purchase. Husband, if you have complaints, don't eat 'em! I'll gladly eat your remaining one and a half sandwiches!

Shamrock Ice Cream Sandwiches

Happy St Patrick's Day!

3/4 cup butter, softened
1/4 cup granulated sugar
1/4 cup packed light brown sugar
1 egg yolk
1 3/4 cups all purpose flour
3/4 tsp baking powder
1/8 tsp salt
3 to 4 drops of green food coloring
1 pint ice-cream or frozen yogurt any flavor
3 1/2 to 5 inch shamrock cookie cutter

Combine butter, sugar, brown sugar and egg yolk in a medium bowl. Add flour, baking powder, salt and green food coloring. Mix well. Cover and refrigerate about 4 hours or until firm.

Roll dough on floured surface to 1/4 inch thickness. Cut out cookies with shamrock cookie cutter. Place on ungreased cookie sheets and bake 8 to 10 minutes or until cookies are lightly brown around the edges. Remove cookies and place on wire racks to cool. Cool completely.

Remove ice-cream from freezer and let stand at room temperature to soften slightly, about 10 minutes. Spread 4 to 5 tablespoons ice-cream onto flat side of half of the cookies. Place the remaining cookies, flat side down on ice-cream. Press cookies together lightly. Wrap each sandwich in foil. Freeze until firm, about 2 hours or overnight.

Skinny Cows and Ice Cream Sandwiches

I am a huge fan of Skinny Cow products, and not just because they are supposedly healthier. I think their vanilla ice cream sandwiches are amazing and I love their Skinny Dippers as well.

The ice cream sandwiches normally come in a pack of six, they carry a much larger box at Costco. I am always tempted to buy, but...

I cannot keep these in the freezer. I am addicted.

One thing I am a bit confused about is their affiliation with scrapbooking. In fact, they have a list of scrapbooking events at which you can taste samples. I'm not much of a scrapbooker. I wish there were more places I could test their treats!

For those of you who want to make your own ice cream sandwiches, I am a big fan of these little ice cream sandwich makers -- I don't have this shape, but I am sure they still work just as well. One note I learned? You can even put a pile of brownie scraps in and it makes a pretty yummy ice cream sandwich, even thought it might not be quite as pretty as using the cut out shapes.
